An Olfa knife especially the wide blade variety works well being very flexible and without teeth. Some masking or packing tape on the topsheet is good too.

Found one of the 1/2" Robert Sorby #241 Paring Chisel for a cheaper price, it's on the way. Thanks for the recommendations everyone.

I've always used a small thumb plane. Hold it light enough that it doesn't scratch the topcoat, but still smooths the excess plug/epoxy down to flush. Holding it at an angle to the direction I'm pushing it makes it slice through lumps like butter. I usually fill old binding holes with splinters/wood shavings and some type of glue or epoxy.

Most ski shops will sell you the small plastic plugs they use. super easy just pound em in. They are fairly cheap.

I've already got them plugged with those plastic plugs and epoxy, just need to make them flush with the skis topsheet. Hopefully this Chisel I ordered will do the trick, then it'll be time to mount the bindings.

The upside down chisel worked!! Not too bad for a first time working on any kind of skis, I hope, lol
