I started backcountry skiing in the cascades; Oregon, on ungroomed hiking trails. At the time, I used wooden skis; and ankle high boots. My suggestion is that the boots are at least, if not more, important than the skis. You want somehing with ankle support. Second; weight, as with hiking, is critical, both for skis and boots. I prefer leather boots for comfort. Waxless skis are probably best for a beginner. Keep the ski length short; say 180 cm for you, 160 for your wife, to ease turning. A slight side cut to the skis helps. I like the three-pin binding; it is proven, and allows you to easily lift your heel on the flat stretches.
Of course; the others with have alternative opinions....everybody has one.
Good sking!

One more thing; get skis with steel edges; to help in any ice or hard snow; not simple wood birke beiners or anse wood.
