There is one tool that could take care — it seems — of the bases; it is called Skivision base flattener or something like that... I wonder if it is as good as they claim...

Pretty much what I do. I always make sure to ask what structure they're using; I like kind of a medium, all purpose structure, since I only have it done once every couple of seasons, usually. I let them do the edges when they grind, then just touch them up myself from there on. Prefer to do the waxing myself, choosing the process, wax, and how many coats.
And, I also lean towards a 90 degree edge bevel... but go along with a 1 degree since it's pretty standard factory grind, and what shops routinely do.My xc, xcd skis, I just keep the 90... but don't worry about the edges much, until I see any rust starting.
