IMO, Hoks are best for NO trail -- poking around in the woods -- but I can't speak for the Whites.

If it is "low-moderate angle, lighter weight touring" that you are after, the S-bound 112 might be right. Sounds like you like a cable, so Voile 3-pin cable is a solid possibility; also Super Telemark, but be sure the boot's duck bill fits the ST trap (I'm sure somebody here knows). Hey, all I did was repeat what you said.
It gets down to what you mean by "tour" (and how your touring might evolve) -- the steeper the up and use of skins, the more free pivot fits the bill.

FWIW, I know a few people (including me) who ski the V6 with T3/T4. Caveats: This is with the Voile 3-pin cable binding. This is with the BC (scaled) version of the V6. Also, we are not "hard core" so this combination works well for us -- and we're lucky to have beautiful snow most of the time. Just...

Looks like my T2X (after T2 and before Eco).
Edit: And I recall thinking the t2 Eco looked just like my T2X.
