We are spoiled for choice here in northern Italy where the Austrian Tirolian cuisine crashes into northern Italian cuisine. The semi-autonomous region of Sud Tirol (not very Italian at all, snatched in ww1) has great speck which keeps really well for multi day (or multi month) touring. If you are eating in a lodge- Austro-Hungarian Goulash is a favorite. Kaminwurst (fireplace sausage) is super light and the greatest backpacking food ever- summer or winter. Italian food like polenta with a topping of melted Asiago cheese and Porcini mushrooms is very mountain. As they say in the Sud Tirol- Berg heil!
My favorite (après--) ski food is a poutine served at the Mont Apica snowmobile relais in the Laurentides wildlife reserve where I go backcountry skiing.
I usually go for cheese and salami. When I have more time, I prepare my favorite banana pudding recipe. It is a great dessert option for a mountain or ski trip because it can be prepared ahead of time, stored in a cooler, and enjoyed cold or at room temperature. Banana pudding is a classic Southern comfort food that can be easily adapted for a mountain or ski trip, providing a delicious and satisfying treat after a long day of outdoor activities.
Even on such trips, I do not forget about sports supplements (although I used to sin about it). It's important for everyone who does sports, isn't it?
For multi-day trips, especially when you need lightweight yet nutritious food, I’ve found that powder coconut milk is a game-changer. It packs easily, adds creaminess to any meal, and doesn't take up much space in your pack. You can mix it with water for a quick coconut milk substitute or use it in various recipes like soups or curries.

during skiing i prefer to eat the same things i eat when i am trail running-- basically sugar in the form of gels, gummies, and maple syrup.
afterwards my favorite meal is... cannabis.
